This easy Cobb salad recipe combines the traditional Cobb ingredients with a Southwest twist! Amplify the flavor with corn, avocado, black beans, and one of my favorite Greek yogurt salad dressings – Bolthouse Farms Cilantro Avocado. It is an easy weeknight recipe, especially if you cook the bacon & chicken ahead of time.

Easy Cobb Salad Recipe with a Southwest Twist!

Ingredients - Per Person
1- 2 c. mixed greens
1/2 chicken breast, cooked
2 slices bacon, cooked & crumbled
1/2 -1 hard boiled egg, chopped
1/4 avocado, diced
3-4 diced cherry tomatoes
1/8-1/4 c. cooked corn
1/8 - 1/4 c. black beans, rinsed
1/8 - 1/4 c. shredded cheese
2 tbsp. Bolthouse Farms Cilantro Avocado dressing, or similar
Directions
Fill your bowl with the desired amount of mixed greens.
Top with the chicken, bacon, egg, avocado, tomatoes, corn, black beans, and shredded cheese.
Finish the salad by adding your desired amount of dressing.
