Low-Carb Cheesy Italian Sausage & Veggie Skillet

This is a great one pan, low-carb weeknight dinner full of flavor from the Italian sausage, seasoning and mozzarella cheese. A variety of veggies make it a robust, nutritional meal.

Ingredients

  • 1 lb. ground mild Italian sausage

  • 1/2 white onion, diced

  • 1 bell pepper, diced

  • 8 oz mushrooms, diced or ground in food processor

  • 10 oz pkg. frozen cauliflower rice

  • 14 oz canned diced tomatoes (I prefer fire-roasted)

  • 1 tsp. Italian Herb seasoning

  • Salt and fresh-ground black pepper, to taste

  • 2 cups shredded Mozzarella cheese

  • Dried parsley to garnish, optional

Directions

  • Cook sausage in a large, oven-safe pan over medium-high heat until it's nicely browned.
  • Add diced or ground mushrooms, diced bell pepper, and diced onion. Continue to cook over medium heat until veggies are soft.
  • Microwave the frozen cauliflower rice according to instructions on the bag.
  • Add the cauliflower rice and canned diced tomatoes to the rest of the sausage and veggies.
  • Continue to cook on medium-high heat until almost all of the liquid has evaporated.
  • Add the Italian seasoning and season with salt and fresh-ground black pepper to taste.
  • Add 1/2 to 1 cup grated mozzarella and stir to distribute the cheese in the mixture. Sprinkle the remaining cheese over the top.
  • Place under oven broiler and broil until the cheese turns golden brown. Skip this step if you are not using an oven-safe pan.
  • Garnish with dried parsley and serve.
