This is a great one pan, low-carb weeknight dinner full of flavor from the Italian sausage, seasoning and mozzarella cheese. A variety of veggies make it a robust, nutritional meal.
One Pan Low Carb Cheesy Italian Sausage & Veggie Skillet

1 lb. ground mild Italian sausage
1/2 white onion, diced
1 bell pepper, diced
8 oz mushrooms, diced or ground in food processor
10 oz pkg. frozen cauliflower rice
14 oz canned diced tomatoes (I prefer fire-roasted)
1 tsp. Italian Herb seasoning
Salt and fresh-ground black pepper, to taste
2 cups shredded Mozzarella cheese
Dried parsley to garnish, optional
Directions
- Cook sausage in a large, oven-safe pan over medium-high heat until it's nicely browned.
- Add diced or ground mushrooms, diced bell pepper, and diced onion. Continue to cook over medium heat until veggies are soft.
- Microwave the frozen cauliflower rice according to instructions on the bag.
- Add the cauliflower rice and canned diced tomatoes to the rest of the sausage and veggies.
- Continue to cook on medium-high heat until almost all of the liquid has evaporated.
- Add the Italian seasoning and season with salt and fresh-ground black pepper to taste.
- Add 1/2 to 1 cup grated mozzarella and stir to distribute the cheese in the mixture. Sprinkle the remaining cheese over the top.
- Place under oven broiler and broil until the cheese turns golden brown. Skip this step if you are not using an oven-safe pan.
- Garnish with dried parsley and serve.
