Easy, Week Night Southwest Cobb Salad

This easy Cobb salad recipe combines the traditional Cobb ingredients with a Southwest twist! Amplify the flavor with corn, avocado, black beans, and one of my favorite Greek yogurt salad dressings – Bolthouse Farms Cilantro Avocado. It is an easy weeknight recipe, especially if you cook the bacon & chicken ahead of time.

And if you need something sweet to finish your meal, I highly recommend making my Grandma’s Chocolate Chip Cookie Recipe (with sprinkles!). This is a favorite in my house – crispy, crunchy edges with a chewy middle! I add sprinkles to make it even more fun for the kids. 

Easy Cobb Salad Recipe with a Southwest Twist!

Difficulty: Beginner

An easy weeknight Cobb salad recipe featuring a Southwest twist - flavors are amplified by the addition of avocado, corn, black beans, and bell peppers. Substitute the Bolthouse Farms Cilantro Avocado dressing with your favorite, if desired.

Ingredients - Per Person

  • 1- 2 c. mixed greens

  • 1/2 chicken breast, cooked

  • 2 slices bacon, cooked & crumbled

  • 1/2 -1 hard boiled egg, chopped

  • 1/4 avocado, diced

  • 3-4 diced cherry tomatoes

  • 1/8-1/4 c. cooked corn

  • 1/8 - 1/4 c. black beans, rinsed

  • 1/8 - 1/4 c. shredded cheese

  • 2 tbsp. Bolthouse Farms Cilantro Avocado dressing, or similar 

Directions

  • Fill your bowl with the desired amount of mixed greens. 

  • Top with the chicken, bacon, egg, avocado, tomatoes, corn, black beans, and shredded cheese.

  • Finish the salad by adding your desired amount of dressing.
